Discovered today and confirmed by support than you can’t search for product variations. I suspect this is tied to the fact you can’t update variations either but logging as maybe two things get fixed at once. It’s amazing to me with all the work on this plug-in it was deemed MVP without including variable products which are a huge part of WC core.

WooCommerce Zapier now has full support for production variations in all 3 Product actions (Find Product, Update Product and Create Product).
