We need the ability to create subscriptions that are non-recurring. For instance… we sell a subscription product for 3 months at a one-time fee of $100. We do not want this 3 month subscription to renew NOR send out any emails regarding the expiry of the subscription etc.

This is possible and has been for a number of years. 🙂
To sell a subscription product for 3 months with a one-time fee of $100, set your product’s price like this: https://cloudup.com/c1UX0nV6Y52
That will charge the customer $100 once when they sign-up, then the subscription will end after 3 months.
Subscriptions doesn’t send the customer any email about the subscriptions expiration unless you use in a plugin like Folllow Up Emails to send those emails.

This is also now possible with a free mini-extension currently in public alpha testing. The extension makes it possible to offer subscription/recurring options on non-subscription product types (like Simple Products, Variable Products, Product Bundles or Product Composites).
