Offer add-ons like gift wrapping, special messages or other special options for your products.
Apply global add-ons using product tags (not categories)
Be able to apply add-ons based on tags instead of categories, to make it more granular.

A similar request with more votes already exists in this board: https://woocommerce.com/feature-request/allow-us-to-use-product-tags-as-well-as-categories-to-apply-add-ons-to-products/. Therefore, I will mark this one as closed — feel free to up-vote the above request instead.
This would be very helpful! or the ability to selectively disable Global Add-ons on a product by product basis so that multiple product categories wouldn’t have to be made.. it gets messy when you have to make all these product categories and you don’t want them displayed publicly.
