Display new subscription end date on emails

Our subscriptions end on May 31 of each year. I would like to be able to show this to the customer in their completed order emails, so instead of “Until Cancelled” or the preset 1 year expiry from today, the End Date would be May 31.

I am using Subscriptions with AutomateWoo and have created new end dates following this: https://woocommerce.com/document/automatewoo/examples/subscription-workflows/create-a-fixed-expiration-subscription/

If we could have filters or action hooks where we can change the end date to the updated one that would be great. Better yet, it would be great if we could override the subscriptions-info.php email template in a child theme.
