It would be helpful for us if we were able to add pre-orders to individual variations.
We sell books and some customers would like to pre-order the paperback edition of a book while the hardback is still available for sale – I don’t particularly want to create two pages for the same book.

That’s a very common use case — paperback vs. hardback where only one edition needs pre-order status is a perfect example of why product-level pre-order settings fall short.
Smart Pre-Order Manager for WooCommerce supports enabling pre-order status per individual variation, so you can set the paperback edition to pre-order while the hardback stays available for immediate purchase — all on the same product page, no need for duplicate listings.

I’d love to have this an option when customers are expressing an interest in a particular size or colour combination i’d like them to be able to initiate a pre-order for that particular size and colour combination.
