Ability to not only schedule a publishing date for a product which is currently available using WordPress’ core function to schedule posts, but also be able to schedule a time for a product to be taken offline/out of stock/hidden. This would be useful for stores that have limited-time specials, e.g. food businesses with monthly specials, retails stores with limited-time promotions or seasonal products, service-based and booking businesses like events, workshops, etc., florists who need seasonal arrangements, and so on.

This seems to exist to a degree in extensions but would be a good addition to the core plugin.
