The ability to have different handling times based on the product of category

Would be really helpful if you could set different products to have different lead times to dispatch. I.e. items 1 can be dispatched on the same day but items 2 takes 3 days to process before dispatch. So depending on what dispatch times are required the website blocks out dates on the date picker based on product settings.
