When adding a manual booking, we cannot enter any information about Guest customers.
Add a note feature to enable us to save that information so that we know who to expect on the booking.
Alternatively, add an easy way to add a new customer on that page, so that we don’t have to go to Users > Add New to register a customer, and then get back to the booking.

the files are really lacking also at exposing actions and filters to hook onto – otherwise other solutions could have been made already.
I agree on being able to add customer info on step 1 – I would think this would include FirstName, LastName, Email, Phone. This way it can show names on the bookings list or calendar – as well if you create an order for the booking, that info can be passed to the order too. I do something similar to this in one of my plugins – radios to select whether choosing from existing (or leaving as guest), or creating a new customer, which then makes the 4 or so fields visible. I also think the notes field mentioned by others is needed in addition to being able to create a customer in the flow.
Agree, find adding customers as a whole user time consuming and no ability to leave notes painful.
