Add the ability to change shipping class with the options

Product Add-Ons allows you to add customization options to your products. These options are product characteristics/attributes, like color or engraving, and not actual products with physical properties, like weight, inventory or SKU.
If you are looking to create a product configurator where each option is a separate product, with its own shipping class, then I recommend using Composite Products instead: https://woocommerce.com/products/composite-products/.
