Provide a way to change the Default Gift Card Image

There needs to be a way to “change” the default GC image to a custom one that matches a site’s branding.

currently it forces only the default image:
/wp-content/uploads/wc-square-gift-card-placeholder.png

I can of course replace that image with a new one but it may get overritten on plugin update, or complicated redirections are needed
