WooCommerce Bookings doesn’t currently support multiple block schedules (half-day and full-day) within a single bookable product, and we have no plans to add that. The duration unit and block configuration are properties of the bookable product as a whole.
For the boat-rental use case, the cleanest approach is to create one bookable product per option (Morning, Afternoon, Full day) sharing the same resource (the boat) so availability stays in sync, and let the customer pick the right product.
