It’s not possible for me to have everything ready for next day bookings witch are booked after 6 P.M. (closing time).
It would be great to have a function witch blocks next day booking bocks.

Thanks for the suggestion.
This is already possible in WooCommerce Bookings via the “Minimum block bookable (into the future)” setting on the bookable product. Setting it to a number of hours large enough to push a 6pm booking past the next day (for example, 14 hours) will effectively block any next-day slots once that cutoff is passed.
