It would be great to add global rates to categories & products site wide.
It could be an additional plugin with a compatible calendar where it adds Global Holiday Rates or other fees and costs after “Bookings” has been added to cart/check out

Thanks for the suggestion.
WooCommerce Bookings does not currently support global cost rules across products, and this mirrors WooCommerce core, which also handles pricing on a per-product basis rather than globally or per-category. This request has been open for a while without gathering broader demand from other users, so we are closing it out for now and prioritising features that benefit a larger portion of our community.
If this becomes a more widely-requested pattern down the road, we are always open to revisiting it.
