Right now to see product add on info you have to go all the way into the order, would be nice to be able to easily add your product add on info into one of the colomns on the bookings/order dashboard, so you dont have to click into the order. makes a better overview, so basically an easy way to customize your order/booking dashboard to show the info you feel is most important to access quickly.

Thanks for the suggestion.
This is now possible with recent versions of WooCommerce Product Add-Ons — you can manually add an add-on to an existing order item from the order edit screen, without having to re-create or modify the original booking.
