Have you actually looked at Product > Availability? The rules actually do not work the way one would normally think. For example, if you have a Bookable Product available for 1hr blocks in the afternoon, and 2hr blocks in the evening (not totally uncommon right?), there is currently no way to achieve this on one calendar.
You simply can’t use the existing Admin to achieve any kind of flexibility like this.
