Similar to variations it would be great to add stock levels against each product option.
How it would work:
Add extra field for stock quantities eg 5 black, 4 blue
When 5 of the black have been purchased, that option greys out

Add-ons are not physical/standalone products, but product attributes/characteristics and therefore do not have product attributes like SKU or inventory management settings. If you are looking to create a product configuration, where each option is a separate product with its own SKU and inventory settings, I recommend using Composite Products instead: https://woocommerce.com/products/composite-products/.
Definitely need that feature. Do you plan to do it ?
this would be wonderful! i deal with charms and I may not have all charms in stock. so if I only had 3 black, 2 red and 10 pink…. i’d like the red to grey out or not be available when that charm has sold out. Gives me time to restock that charm while not removing the option entirely.
