It is possible to enable account creation during a checkout with the Checkout block. This option is dependent on WooCommerce settings and its not strait forward, but we will work on improving the experience. Follow this ticket for progress https://github.com/woocommerce/woocommerce-blocks/issues/7678.
Until then, to enable account creation in the Checkout Block:
1. Go to WooCommerce > Settings > Accounts & Privacy.
2. Enable the Allow customers to place orders without an account option.
3. Go to Checkout block page editor.
4. Select the email inner block and enable Allow shoppers to sign up for a user account during checkout (in the right settings bar)
5. Visit the store as a logged out user
6. Add a product to the cart
7. Go to Checkout block page
8. Notice Create an account checkbox is visible.
