It would be nice to be able to extend the competition automatically if not enough tickets are sold. Emails to participating entrants would be sent informing them that he the competition has been extended by X number of days.

Hello, right now we have option to manually extend competitions with ticket rollover, see https://wpinstitut.com/competitions-for-woocommerce-documentation#extend-competition
In case there is interest for automatic extension we will implement it (couple more votes).
