Making a specific date unbookable for only a part of that day. Now it’s only possible to make a whole day unbookable, but sometime you would like to make a specific day unbookable for just a couple of hours.

Thanks for the suggestion — this is already possible in WooCommerce Bookings today.
Under Product data > Availability, add a rule of type “Date range with time” (or “Time range” for recurring time-of-day blocks) and set it to “Not bookable” for the specific date and hours you want to block off. That makes only part of a day unavailable while keeping the rest open for bookings.
