Option to set up CSV extraction

I have some problems with the CSV transfer. This is because in Denmark we specify amounts with commas and not with periods. e.g. 20,95

In addition, the system cannot handle Æ-Ø-Å, i.e. Danish characters.
I would therefore like to be able to ensure that the correct language format is being extracted from the database. E.g. UTF-8
