I run a hourly service. I would like to see where you can for example set the base rate sun.-thurs. to $100 and have hourly rate at $100, and fri. & sat. base rate at $150 and $150 or less per hour.

Thanks for the suggestion — this is already possible in WooCommerce Bookings today.
Under Product data > Costs, you can add cost rules of type “Days” and pick specific days of the week. Each rule supports both a base cost and a block (hourly) cost, so you can charge $100 base / $100 per hour Sun-Thu and $150 base / $150 per hour Fri-Sat on the same product.
